Last week at our art co-op, the younger group made mini monkey bread for the snack. Well, they made enough for everyone, so my friend who was teaching didn't want the older the group to make it again. She wasn't sure what to do, so I said, "Let's have them make dinner!" Ha ha ha! I was kind of kidding, but at the same time I was thinking, "It's almost 4 o'clock, and I still have to make dinner. If they make my family dinner, I won't have to!"
So, they made Bubble Up Pizza Casserole (to use the biscuits already bought). One for my family and one for my friend's family. After it was all made, we sat back and my friends said, "I love this idea. We should do it every week; have the older group make a freezer meal for us all to take home."
This week, they made lasagna. I actually had enough ingredients to make two lasagnas (actually, my friend let me have some of her cottage cheese because I was little bit short) ... so Eliza made one, and Kate made one. We ate one for dinner, and the other went into the freezer.
I am so grateful that we did this! It was one of the best ideas yet! We usually get done with our art co-op around 4:30, so by the time I get home, I don't have very much time to make and eat dinner before getting Eliza and Jon off to mutual, and Kate to activity days. So, tonight we ate at 5 o'clock (a dinner time unheard of in my house!), and had enough time to clear the table and get started on the dishes before mutual and activity days. Then, because I wasn't so burned out, I took the younger three children to the store to get the freezer bags I needed for freezer meals. We came home, did our bedtime routine, then I made two freezer meals (one for tomorrow's dinner, and one for the freezer), and I cleaned up the kitchen. When Jon came home, we just had to do the hand washing. It was so great!
So, tonight, I am soooooo grateful for our new cooking class. And, I will be sad that we won't have it next week ... who will make me dinner next Wednesday???

We have a similar situation with our co-op...We end about an hour before lunch time, though, and by the time we drive home, I don't feel like making sandwiches, I just want to get the little ones down for naps. :) I even suggested we meet earlier in the morning (like at 9 instead of 10) so that I would have more time to fix lunch and avoid the orneries with Aa and Ss. :) :)
